If we happen to be overcome by a crave for sweets, try to choose desserts that are sugar free and can be consumed together with fresh fruits. This walnut cream made with dates and cold pressed walnut oil is an excellent match to apple but can be spread on a cake or brioche as well.
Soak the dates in warm water for three hours.
Grind the walnuts as fine as you can in a kitchen chopper and then add the oils to it. Cut the soaked dates into small pieces and add them to the walnut and the oils.
Start chopping them, gradually adding the soy milk.
When it has reached a creamy consistency, pour on the vinegar.
Use a GMO-free soy milk for the cream. Closed air-tightly in a fridge, it can be stored for as long as a week.
