This fresh and delicious mango mayonnaise is a wonderful sauce accompaniment to baked vegetables or dish. Simple as it is to prepare, it has a magnificent taste.
Peel the mango and cut it into small cubes.
Place the milk thistle oil, the linseed oil, the milk, the apricot vinegar, a pinch of salt and a pinch of pepper, the mustard, the boiled egg yolk and the 50 g mango into a kitchen chopper. Make sure that all are of the same temperature or the mayonnaise will not be creamy. In our experience, fridge temperature makes for the best consistency.
Blend the ingredients for 10 seconds until the mixture reaches mayonnaise consistency.
Finally, mix the finely snipped parsley into the mayonnaise.
