Baked apples are one of the simplest winter delicacies but they make real gourmet food when prepared with the apricot seed oil. This recipe takes only a short time to make but the end result is scrumptious and spectacular.
Cut the bottom of each apple thinly to give it a small footing so that it does not tumble while being baked. Cut off the tops, too, and set them aside. Scrape out the inside of the apples, taking care that the wall remains intact.
Cut the dried apricots into smaller pieces and mix them together with the tigernut flour, the apricot vinegar and the marmalade.
Fill it into the apples and place back the previously cut apple tops.
Arrange the apples in a heat resistant bowl, pour 1/2 dl water under them and bake them in an oven at 180 °C for about 20-25 minutes.
Enjoy it lukewarm. Before serving, sprinkle the tops with a teaspoonful of apricot seed oil.
