The first step to a healthy life is your breakfast. Even better if you start your day with a hot breakfast. Banana and oats pancake made from chia seed flour is not only delicious but also healthy and milk free. Sprinkled with a teaspoonful of chia seed oil, it will even cover your daily need of omega 3.
Slice up the bananas and put the pieces in a mixing bowl, together with the oat flakes, the chia seed flour, the eggs, the salt and the baking soda.
Blend it until no banana lumps remain and then let it rest for 5 minutes.
Meanwhile, heat a pan to medium temperature and put some rape seed oil in it. When the pan is hot, scoop three smaller ladles of the batter, calculating for 9 smaller pancakes. Fry them carefully and when the bottom of the pancake allows, turn it over with a plastic turner and fry the other side. Because of the dark color of the chia seed flour, take extra care that you do not fry it longer than necessary or it gets easily burnt. Before serving, sprinkle the pancakes with honey and decorate them with kiwi slices.
