Peel the garlic and squeeze it into a bowl. Salt it mildly and mix it together with the sunflower oil. Tear the bread into pieces and add them to the garlic. Mix all the ingredients thoroughly and toast them slowly at medium heat in a pan. In another pan, roast the sunflower seeds and add them to the bread, too.
Prepare the tomato salad: Cut the tomatoes into pieces and dice the shallots. Place them in a bowl, flavor it with sea salt and pepper. Mix it all thoroughly and then add the olive oil, working it in carefully. Tear the basil leaves into small pieces and mix them into the salad, too.
Finally, place the tomato salad and the crispy, garlicky toasted bread cubes in a nice, big bow, tossing it all together. Serve and enjoy it fresh.
