Chimichurri is an oily-vinegary sauce, prepared with green herbs and served as an accompaniment to grilled meats and sausages in the Mexican kitchen. In this recipe, we are offering a version with meatball skewers.
Chop the parsley, the spring onions, the garlic and the chili very finely.
Pour the apple balsamico in a small bowl together with half of the salt, allowing some time for the salt crystals to melt. Then mix in the oils and a pinch of pepper.
Mix the herbs into the dressing, and store it in a fridge until use.
Knead the minced beef together with the egg yolk, the rest of the salt and 1-2 pinches of salt.
Shape the meat into balls on the skewers, and then grill them on 1-2 tbsp of sunflower seed oil in a pan. Flavor them with the chimichurri sauce.
