It takes only minutes to prepare a real gourmet salad from asparagus. For this warm asparagus shrimp salad, we recommend a special dressing made from sesame seed oil and cherry vinegar, which is a great match with this Eastern style chili salad dressing.
Wash the green asparagus thoroughly and cut off their woody ends.
Cut the cleaned asparagus sticks into 3 cm pieces.
Clean the pre-cooked shrimps, removing their shells.
Cut the spring onions into thin rings, grate the garlic and snip some chili (according to taste). Sear them on a spoonful of rapeseed oil for 1-2 minutes.
Add the asparagus to the onion base and sear it for 3-4 minutes.
Add the cleaned shrimps and fry it all together for 3 more minutes.
In the meantime, prepare the dressing. Mix the vinegar together with a pinch of salt, allowing the salt crystals to dissolve.
Mix in the chili mustard, the soy milk, the sesame seed oil and blend them well.
Finally, toss the dressing together with the lukewarm salad. Serve it lukewarm, garnished with fresh coriander leaves.
