Fruit and oat muffin

Muffins made from oat flakes are not just a delicious dessert but a great breakfast meal, too, combined with some fruit and dairy product. They can be made even more wholesome when offered with fruit enriched by chia oil. As they keep fresh for 2 or 3 days, you can prepare them in advance or even take them to work or for a journey.

In a larger bowl, mix the fine oat flakes with the baking powder, the ground cinnamon, the peeled and finely cubed apples, the salt and the mashed banana.

In a smaller bowl, mix thoroughly the milk with the honey and the egg.

Pour the liquid ingredients to the dry ones, and then add the coarsely chopped almonds and the rapeseed oil.

Bake it in a preheated oven at 175-180 °C for about 32-37 minutes.

Tip:

To serve, decorate the muffins with plain yoghurt and berries mixed with chia oil.
